Full Job Description

Due to our brilliant Head Chef of 4 years sadly coming out of the trade due to health reasons, we're looking for an experienced and reliable fresh food Head Chef to join our team and manage the really great, established brigade of around 7 - 9 people.

He and his team recently won the Muddy Stilettos 'Best Destination Pub 2024' Award and we're keen to find somebody who can carry this excellent standard on.

This position is full time, permanent, and is based on a 45 hour week. The position can also be hourly if preferred, rather than salaried or the contract could be for 40 or 50 hours, dependent on your preference.

This role involves:

Cooking dishes to a high standard for our guests and ensuring all other chefs are prepping, cooking and plating in the same way. Achieving and maintaining given GP's across the menu.

Monitoring supplier pricing and quality and to manage accordingly any delivery/pricing/quality issues, making the owners aware of any key issues.

Upholding and maintaining high hygiene standards at all times to ensure our current 5 star Health & Hygiene rating, using Safer Food, Better Business as the key paperwork platform, ensuring that all relevant paperwork is completed daily.

To manage the rotas, staffing, holiday planning and wage bill for the kitchen according to business demand.

To mentor and develop junior members of the crew and ensure that a calm, communicative, respectful, transparent and inclusive workplace is promoted at all times.

To research, create and fully cost out menus in a timely fashion. To plan in a timely fashion special event menus with the owners as part of a full marketing plan for the business.

To ensure clear communication lines with the front of house team to ensure smooth and accurate information flow to our customers.

You'll need to be creative, organised and have previous experience of not only producing great food but also be able to get the best from your team in terms of management and keep the paperwork of the kitchen up to date and in good order.

The Queen's Head at Bramfield is a privately owned, independent village pub/restaurant serving fresh food. The menu is a blend of upper end pub classics and a la carte dishes, with roots in classical French, Pan Asian and Mediterranean style cookery.
